Split Pea Fritters with Curry Sauce
- 3/4 cup Lion Brand split pea powder
- 1 small onion, chopped finely
- 4 garlic cloves, minced
- 2 tablespoons cilantro leaves, chopped finely
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon cumin
- 1/4 teaspoon paprika
- 1/4 teaspoon Cayenne pepper
- 1 teaspoon salt
- Coconut oil for light frying
- 1/4 cup water
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 tsp ginger, grated
- 1/2 tsp ground turmeric
- 1/2 tsp cumin
- 1/2 tsp ground paprika
- 1 medium tomato, chopped
- 1 tbsp Ibis flour
- 1 tbsp chadon beni leaves, chopped
- 1/4 tsp salt

1. Make curry sauce and set aside (recipe below). Drain and rinse split peas. Transfer to a food processor and process until it forms a paste
2. Transfer to a large bowl, add onion, garlic, cilantro, turmeric, cumin, paprika, cayenne pepper a salt and stir to fully combine
3. Heat oil in a large skillet over medium heat, divide batter and form into balls. Form fritters by flattening balls with the palm of hands. Cook fritters, about 4 at a time for about 3-4 minutes or until golden brown. Turn fritters and cook for another 3-4 minutes. Repeat until batter is used up. I also love to cover the skillet for about 2 minutes midway during cooking to make sure the middle of fritters is fully cooked
4. Serve hot with curry sauce
1. Heat oil in a medium sauce pan over medium-high heat. Add onions and sauté until soft, about 3 minutes
2. Stir in garlic, ginger, tomato, turmeric, cumin, paprika, chadon beni, and salt. Stir for another minute
3. Add Ibis flour and stir for another minute
4. Add water and bring to a boil
5. Reduce heat to a simmer for about 5 minutes
6. Remove from heat, allow to cool before serving
