Orange Pine Sponge Cake

  • 1/2 lb Sugar
  • 1/2 lb Butter
  • 4 Eggs
  • 1/2 lb LION Self Rising Flour
  • 1/4 tsp Lime Zest
  • 1/4 Cup Orange Juice
  • 1/4 Cup Pineapple Juice
  • 1/2 tsp Orange Pine or Vanilla Essence

Method

    1. Cream butter and sugar until dissolved
    2. Blend eggs with lime zest and add slowly to batter, mixing for 2 - 3 minutes after every addition of egg
    3. Add Essence
    4. Combine orange and pineapple juice
    5. Sift flour and fold into batter slowly alternating with juice mixture
    6. Pour into greased and floured cake pan
    7. Bake into a pre-heated oven at 375 F for approximately 23 - 30 minutes or until firm to the touch
